Ingredients:

Prepare Seekh Kabab:

-Pyaz (Onion) 1 medium

-Hari mirch (Green chillies) 3-4

-Lehsan (Garlic) 6-7 cloves

-Adrak (Ginger) 2-inch piece

-Hara dhania (Fresh coriander) handful

-Boneless beef 1 kg (with 10% fat)

-Desi Ghee (Clarified butter) 2 tbs

-Breadcrumbs 3-4 tbs

-Hamdard Seekh Kabab Masala 1 pack

-Chilled water as required

Prepare Biryani

-Desi Ghee (Clarified butter) ½ Cup

-Pyaz (Onion) sliced 2-3 medium

-Tamatar (Tomatoes) chopped 2-3 medium

-Adrak lehsan paste (Ginger garlic paste) ½ tbs

-Dahi (Yogurt) whisked 1 Cup

-Hamdard biryani masala 1 pack

-Water ¼ cup

-Koyla (Charcoal) 1 piece

-Cooking oil as required

-Water ¼ Cup or as required

-Podina (Mint leaves) handful

-Hara dhania (fresh Coriander) handful

-Lemon Slices 3-4

-Hari mirch (Green chillies) slitted 2

-Chawal (Rice) sella 1 kg (70% boiled)

-Hara dhania (fresh Coriander) handful

-Podina (Mint leaves) handful

-Hari mirch (Green chillies) slitted 2

-Lemon Slices 2-3

-Desi Ghee (Clarified butter) 2-3 tbs

-Kewra water 1 tsp

-Zarday ka rang (Orange food color) ½ tsp

-Hari mirch (Green chillies) 1

 

Direction:

Prepare Seekh Kabab

-In a chopper, add onion, green chillies, garlic, ginger, fresh coriander, chop well.

-Add beef boneless, clarified butter, roasted gram flour, seekh kabab masala, chop well.

-Refrigerate for 30 minutes.

-Dip hand in chilled water & take out 60g of seekh kabab mixture, skew in a metal skewer & make seekh kababs. (Makes 14-16)

-On a griddle, add cooking oil, heat it.

-Remove kababs from the skewer & fry from all sides until done.

Prepare Biryani

-In a cooking pot, add clarified butter, let it melt & heat it.

-Add onion, fry on medium flame until light golden.

-Add tomato, ginger garlic paste, mix well, cook on medium flame 3-4 minutes or until tomato softens.

-Add yogurt, biryani masala, mix well, cook on medium flame for 3-4 minutes or until oil separates.

-Add fried seekh kabab, mix well, cook on medium flame for 1 minute.

-Give a coal smoke then take out seekh kabab & set aside

-Add water & mix well.

-Add mint leaves, fresh coriander, lemon slices, green chillies, & half quantity of boiled rice.

-Now layer smoked seekh kabab, fresh coriander, mint leaves, green chillies, lemon slices   & remaining boiled rice.

-Make space with the help of the back of spoon & add clarified butter.

-Add kewra water, orange food color & green chilli then cover with kitchen cloth & Lid, steam cook on low flame for 10-15 minutes.

-Smokey Seekh kabab Biryani is ready! Serve it with salad & raita & enjoy!
