Ingredients:
Prepare Malai Chicken Filling:
-Dahi (Yogurt) 3-4 tbs
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Hari mirch paste (Green chilli paste) ½ tbs or as required
-Iodized Himalayan pink salt 1 tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Elaichi powder (Cardamom powder) ¼ tsp
-Garam masala powder ¼ tsp
-Safed mirch powder (White pepper powder) ¼ tsp
-Boneless chicken cubes 450g
-Cooking oil 1 tbs
-Badam (Almonds) powdered 1 & ½ tbs
-Olper’s cream ¾ Cup
-Kasuri methi (Dried fenugreek leaves) ½ tsp
Prepare Balloon Naan
-Maida (All-purpose flour) 3 Cups
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Sugar powdered 1 tsp
-Baking soda ½ tsp
-Cooking oil 2 tbs
-Dahi (Yogurt) 3 tbs
-Lukewarm water ¾ Cup or as required
-Cooking oil (For greasing)
-Dry flour as required
-Mozzarella Cheese 1-2 tbs
-Hari mirch (Green chillies) sliced as required
-Hara Dhania (Fresh coriander) chopped as required
-Water as required
-Makhan (Butter) melted as required
-Hara dhania (Fresh coriander) chopped
Direction:
Prepare Malai Chicken Filling:
-In a bowl, add yogurt, ginger garlic paste, green chilli paste, pink salt, black pepper powder, cardamom powder, garam masala powder, white pepper powder & whisk well.
-Add chicken & mix well.
-Cover & marinate for 30 minutes.
-In a pan, add cooking oil & heat it.
-Add marinated chicken, mix well and cook for 2-3 minutes.
-Add almond powder, mix well, cover & cook on medium flame for 5-6 minutes.
-Remove cover, mix well & cook on high flame until it dries up.
-Turn off the flame, add cream & mix well.
-Turn on the flame, add dried fenugreek leaves, cover & cook for a minute.
-Turn the flame off & let it cool completely.
Prepare Balloon Naan
-In a bowl, add all-purpose flour, pink salt, sugar powder, baking soda, cooking oil, yogurt & mix well until it crumbles.
-Add water gradually, mix well & knead until dough is formed.
-Cover & let it rest for 1 hour.
-Transfer dough on a flat surface, dust dry flour, knead dough again until smooth.
-Cut dough into 4 equal parts, take 1 part, make smooth ball, dust dry flour & roll out with the help of rolling pin (thickness: 2mm)
-Cut 2 circles with the help of round cutter (6 inches).
-Add prepared chicken filling in the center of the circle dough, add mix cheese, green chilli, fresh coriander.
-Apply water on edges, place boba straw at one side of the dough ensuring the tip reaches the center & cover with another circle dough, blow through the straw to inflate naan, then quickly slide the straw out & pinch the opening to trap air.
-Place it in an air fryer & air fry for 3-5 minutes at 170 C. (Makes 8-9)
-Brush melted butter immediately, & garnish with fresh coriander & serve!

-Ek bowl mein dahi, adrak lehsan paste, hari mirch paste, pink namak, kali mirch powder, elaichi powder, garam masala powder, safed mirch powder dalein aur achi tarah whisk karlen.
-Chicken dalein aur achi tarah mix karlen.
-Cover karke 30 minutes ke liye marinate kar den.
-Pan mein cooking oil dalein aur garam karlen.
-Marinated chicken dalein, mix karlen aur 2-3 minutes tak paka len.
-Badam powder dalein, mix karlen, cover karke darmiyani aanch par 5-6 minutes paka len.
-Cover hata kar mix karlen aur tez aanch par paka len jab tak khushk ho jaye.
-Aanch band kar den, cream dalein aur mix karlen.
-Dobara aanch on karen, kasuri methi dalein, cover karke 1 minute paka len.
-Aanch band kar den aur mukammal thanda hone den.
Prepare Balloon Naan:
-Ek bowl mein maida, pink namak, cheeni powder, baking soda, cooking oil, dahi dalein aur achi tarah mix karlen jab tak crumble jaisa texture ban jaye.
-Pani thora thora dalein, mix karte hue gundh len jab tak dough tayar ho jaye.
-Cover karke 1 ghanta rest karne den.
-Dough ko flat surface par nikal len, dry maida chhirak kar dobara gundh karen jab tak smooth ho jaye.
-Dough ko 4 barabar hisson mein taqseem kar len, 1 hissa le kar smooth ball bana len, dry maida laga kar belan ki madad se 2mm motai tak bel len.
-Round cutter (6 inch) ki madad se 2 circles kaat len.
-Dough ke center mein tayar shuda chicken filling rakh den, mix cheese, hari mirch aur hara dhania dalein.
-Edges par pani laga den, ek side se boba straw rakh den is tarah ke straw ka sirah center tak pohanch jaye, doosra circle upar rakh kar cover kar den, straw se phoonk maar kar naan ko phula len, phir foran straw nikaal kar opening pinch karke hawa andar trap kar den.
-Air Fryer mein rakh kar 170°C par 3-5 minutes air fry kar len. (8-9 tayar honge)
Foran pighla hua makhan brush kar den, hara dhania se garnish karen aur serve kar den.
