Ingredients:
-Mutton leg 2 kg
-Kacha papita (Raw papaya) paste 2 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Himalayan pink salt 2 & ½ tsp or to taste
-Lemon juice 3 tbs
-Dahi (Yogurt) ½ Cup
-Hari mirch (Green chilli) paste 2 tbs
-Olper’s cream 3 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Dhania powder (Coriander powder) 1 tbs
-Dried oregano ½ tbs
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 2 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Ajwain powder (Carom powder) ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Garam masala powder 1 tsp
-Ghee (Clarified butter) 3 tbs
-Pyaz (Onion) 2 medium
-Lehsan (Garlic) 10-12 cloves
-Hara dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
-Water ½ Cup or as required
-Lehsan (Garlic) ½ bulb
-Himalayan pink salt ¼ tsp or to taste
-Lal mirch powder (Red chilli powder) ¼ tsp or to taste
-Olper’s cream ½ Cup
-Hara dhania (Fresh coriander) chopped 1-2 tbs
Directions:
-Remove fat layer from mutton leg & make deep cuts with the help of knife.
-In a dish,place mutton leg,add raw papaya paste,ginger garlic paste,pink salt,lemon juice & rub well on both sides,cover with cling film & marinate for 30 minutes.
-In a bowl,add yogurt,green chilli paste,cream,kashmiri red chilli powder,coriander powder,dried oregano,cumin seeds,red chilli powder,turmeric powder,ajwain powder,black pepper powder,garam masala powder,clarified butter & mix well.
-On marinated leg,add prepared marinade & rub evenly,cover with cling film & marinate for 2 hours in refrigerator.
-In pressure cooker,add onions,garlic,marinated mutton leg,fresh coriander,mint leaves,water & garlic bulb,cover & pressure cook on medium flame for 1 hour.
-Take out mutton leg,garlic bulb & set aside.
-Transfer gravy in saucepan & blend well.
-Turn on the flame,add pink salt,red chilli powder,mix well & bring it to boil.
-Turn off the flame,add cream & whisk well.
-Add fresh coriander & mix well.
-Serve mutton leg with garlic & gravy!

-Mutton leg sa fat layer remove ker lein aur knife ki madad sa deep cuts laga lein.
-Ek dish mein mutton leg,kacha papita paste,adrak lehsan paste,pink salt aur lemon juice dal kar dono sides par achi tarah rub karein,cling film se cover karein aur 30 minutes kliye marinate kar lein.
-Ek bowl mein dahi,hari mirch paste,cream,kashmiri lal mirch powder,dhania powder,dried regano, zeera,lal mirch powder,haldi powder,ajwain powder,kali mirch powder,garam masala powder aur ghee dal kar ache se mix karein.
-Marinated leg par yeh marinade ache se rub kar dein,cling film sa cover karke refrigerator mein 2 hours kliye marinate ker lein.
-Pressure cooker mein pyaz,lehsan,marinated mutton leg,hara dhania,podina,pani aur lehsan ka bulb dal kar medium flame par 1 hour kliya pressure cook karein.
-Mutton leg aur garlic bulb nikaal kar side par rakh lein.
-Gravy ko saucepan mein nikal kar ache se blend kar lein.
-Flame on karein,pink salt aur lal mirch powder dal kar mix karein aur ubal anay dein.
-Flame off karein aur cream dal ker ache tarhan whisk ker lein.
-Hara dhania dal kar mix karein.
-Mutton leg ko lehsan aur gravy ka saath serve karein!
