Ingredients:
Prepare Kathiawari Style Garlic Chutney:
-Lehsan (Garlic) 20-22 cloves
-Iodized Himalayan pink salt ½ tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder 3 tbs
-Water 3 tbs
-Cooking oil 3 tbs
-Zeera (Cumin seeds) 1 tsp
-Water 3 tbs or as required
-Dahi (Yogurt) whisked ¼ Cup
Prepare Green Garlic Thread Paratha:
-Safed atta (White flour) sifted 2 & ½ Cups
-Chakki ka atta (Whole wheat flour) sifted ½ Cup
-Iodized Himalayan pink salt 1 & ½ tsp
-Sugar powdered 1 tbs
-Ghee (Clarified butter) 3 tbs
-Water ¾ Cup or as required
-Ghee (Clarified butter) melted ½ tbs or as required
-Hara pyaz (Spring onion) leaves chopped
-Ghee (Clarified butter) as required
-Ghee (Clarified butter) 1-2 tbs
 
Directions:
Prepare Kathiawari Style Garlic Chutney:
-In a mortar pestle,add garlic,pink salt & crush well.
-Add kashmiri red chilli powder & mix well.
-Add water,mix well & set aside.
-In frying pan,add cooking oil,cumin seeds & mix well.
-Add crushed mixture,mix well & cook on low flame until oil separates (4-5 minutes).
-Add water & mix well.
-Turn off the flame,add yogurt & mix well,turn on the flame & cook on high flame until desired consistency (1-2 minutes).
Prepare Green Garlic Thread Paratha:
-In a bowl,add white flour,whole wheat flour,pink salt,sugar,clarified butter & mix well.
-Gradually add water & knead until dough is formed,cover & let it rest for 1 hour.
-Knead dough again until smooth,take 110g of dough,make a ball & sprinkle dry flour & roll out with the help of rolling pin.
-Spread clarified butter,sprinkle dry flour & cut into thin strips,sprinkle green onion leaves & roll out 4 strips like a swiss roll (stretch in between).
-Place rolled dough on next 4-5 strips & repeat the same process until all strips roll up & tuck in.
-Grease dish with clarified butter,place rolled dough,add clarified butter,cover & let them rest for 10 minutes.
-Now spread dough with the help of greased hands & roll out with the help of rolling pin.
-Heat griddle,place paratha,add clarified butter & fry on low flame from both sides until golden (makes 8).
-Serve with kathiyawari style garlic chutney!

-Kashmiri lal mirch powder dal kar mix karen.
-Pani dal kar mix karen aur side par rakh dein.
-Ek frying pan mein cooking oil aur zeera dal kar mix karen.
-Crushed  mixture dalen aur halki ancch per oil alag ho janay tak paka lein (4-5 minutes).
-Pani dal kar mix karen.
-Flame off karen,dahi dal kar mix karen,phir flame on karen aur high flame par cook karen jab tak desired consistency aa jaye (1-2 minutes).
Prepare Green Garlic Thread Paratha:
-Ek bowl mein safed atta,chakki ka atta,pink salt,sugar aur ghee dal kar mix karen.
-Dheere dheere pani dalte hue dough knead karen,cover kar ke 1 ghanta rest karen.
-Dough ko dobara knead karen,takreeban 110g dough ka ball banaen,dry flour sprinkle karen aur rolling pin se roll out karen.
-Ghee dal ker pheela lein,dry flour sprinkle karen,phir strips cut karen,hara pyaz leaves sprinkle karen aur 4 strips ko swiss roll ki tarah roll karen (beech beech mein stretch karen).
-Phir rolled dough ko next 4-5 strips par rakh kar repeat karen jab tak sari strips roll up na ho jayein,phir tuck in karen.
-Dish ko ghee sa grease karein,rolled dough rakhen aur ghee lagayen,cover karen aur 10 minutes rest karen.
-Ab dough ko grease ki hui hands se spread karen aur rolling pin se roll out karen.
-Garam tawa per paratha rakhen,ghee dal dein aur dono sides se halki ancch per golden ho janay tak fry ker lein (makes 8).
-Kathiawari style garlic chutney ke sath serve karen!
