Ingredients:
-Cooking oil ½ Cup
-Lehsan (Garlic) sliced 2 cloves
-Curry patta (Curry leaves) 10-12
-Zeera (Cumin seeds) 1 tsp
-Sabut lal mirch (Button red chillies) 3-4
-Pyaz (Onion) sliced 1 medium
-Tamatar (Tomatoes) finely chopped 2 large
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) ½ tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Garam masala powder ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 /2 tsp or to taste
-Water ½ Cup or as required
-Mong daal (Yellow lentil) 1 Cup washed & soaked for 30 minutes
-Water ¾ Cup or as required
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Hara dhania (Fresh coriander) chopped
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Prepare Onion & Garlic Relish (Thecha):
-Cooking oil 1-2 tbs
-Pyaz (Onion) sliced 1 medium
-Lehsan (Garlic) cloves ½ Cup
-Hari mirch (Green chillies) 8-10
-Sukhi lal mirch (Dry red chillies) 3-4
-Zeera (Cumin seeds) 1 tsp
-Mongphali (Peanuts) roasted 2 tbs
-Himalayan pink salt ½ tsp or to taste
-Hara dhania (Fresh coriander) with stem handful
-Lemon juice 2-3 tbs
Directions:
-In a wok,add cooking oil,garlic,curry leaves,cumin seeds,button red chillies & fry for 1 minute.
-Add onion,mix well & fry on medium flame until golden.
-Add tomatoes,ginger garlic paste,turmeric powder,coriander powder,kashmiri red chilli powder,garam masala powder,pink salt,red chilli powder,mix well & cook for a minute.
-Add water & mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until oil separates.
-Add yellow lentil,mix well & cook on medium flame for 1-2 minutes.
-Add water & mix well,bring it to boil,cover & cook on low flame until lentils are tender (15-18 minutes) & check in between then cook on medium flame until oil separates.
-Add dried fenugreek leaves,fresh coriander,cover & cook on low flame for a minute.
-Garnish with fresh coriander,ginger & serve!
Prepare Onion & Garlic Relish (Thecha):
-In frying pan,add cooking oil,onion,garlic,green chillies,dry red chillies,cumin seeds,peanuts,pink salt, mix well & cook on medium flame for 3-4 minutes.
-Let it cool.
-In mortal & pestle,add cooked mixture,fresh coriander & crush coarsely.
-Add lemon juice & mix well.Onion & garlic relish is ready!

-Karahi mein cooking oil,lehsan,curry patta zeera aur sabut lal mirch dal kar 1 minute tak fry karen.
-Ab ismein pyaz dal kar achi tarah mix karen aur medium flame par golden ho janay tak fry ker lein.
-Tamatar,adrak lehsan paste,haldi powder,dhania powder,kashmiri lal mirch powder,garam masala powder,pink salt aur lal mirch powder dal kar achi tarah mix karen aur 1 minute tak paka lein.
-Pani dal kar ache tarhan mix karein aur dhak ker halki aanch par 4-5 minutes tak paka lein phir tez aanch par oil alag hojanay tak paka lein.
-Mong daal dal kar ache tarhan mix karein aur 1-2 minutes tak medium flame par pakaen.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki aanch per daalein gul janay tak paka lein (15-18 minutes) bech mein check ker lein phir tez aanch par oil alag ho janay tak paka lein.
-Kasuri methi aur hara dhania dal ker dhak dein aur halki ancch per 1 minute kliya paka lein
-Hara dhania aur adrak se garnish ker ka serve karen.

-Frying pan mein cooking oil,pyaz,lehsan,hari mirch,sukhi lal mirch,zeera,mongphali aur pink salt dal kar mix karein aur darmiyani ancch per 3-4 minutes kliya paka lein.
-Thanda ker lein.
-Mortal & pestle mein yeh mixture aur hara dhania dal kar coarsely crush ker lein.
-Lemon juice dal ker ache tarhan mix ker lein.Onion &g arlic thecha tayyar hai!
