Ingredients:

Prepare Instant Tamarind Sauce (Imli ki Chutney):

-Imli pulp (Tamarind pulp) ½ Cup

-Kala namak (Black salt) ½ tsp

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Iodized Himalayan pink salt ½ tsp or to taste

-Brown sugar powdered ½ tbs

-Hara dhania (Fresh coriander) chopped handful

-Water 2-3 tbs

-Chicken 1 kg

-Iodized Himalayan pink salt 1 tsp

-Sirka (Vinegar) 3 tbs

-Water as required

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Hari mirch (Green chilli) crushed ½ tbs

-Haldi powder (Turmeric powder) ½ tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Garam masala powder ½ tsp

-Dhania powder (Coriander powder) ½ tbs

-Lal mirch (Red chilli) crushed ½ tsp

-Zeera (Cumin seeds) crushed 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Kali mirch powder (Black pepper powder) ¼ tsp

-Ajwain (Carom seeds) crushed 1 tsp

-Zarday ka rang (Orange food color) ⅛ tsp

-Dahi (Yogurt) ⅓ Cup

-Baisan (Gram flour) 4 tbs

-Cornflour 3 tbs

-Til (Sesame seeds) ½ tbs

-Dalda Cooking Oil (For Frying)

Direction:

Prepare Instant Tamarind Sauce:

-In a bowl, add tamarind pulp, black salt, red chilli powder, pink salt, brown sugar, fresh coriander, water, mix well, instant tamarind sauce is ready!

-Make gashes on chicken leg pieces.

-In a bowl, add chicken pieces, pink salt, vinegar, water, cover & let it rest for 30 minutes.

-Now strain, then wash chicken thoroughly.

-Transfer it to a bowl, add ginger garlic paste, green chilli crushed, turmeric powder, pink salt, garam masala powder, coriander powder, red chilli crushed, cumin, red chilli powder, black pepper powder, carom seeds, orange food color, & mix well.

-Cover & marinate for 10-15 minutes.

-Now remove the cover, add yogurt, gram flour, cornflour, sesame seeds, mix well.

-In a wok, add cooking oil, heat it (150 C).

-Sprinkle some sesame seeds on chicken pieces & add in heated cooking oil, fry on low to medium flame until golden.

-Serve with raita & prepared instant tamarind sauce.
