Ingredients:
-Boneless chicken 180g
-Hara pyaz (Spring onion) 2 stalks
-Safed mirch powder (White pepper powder) ½ tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Til ka tel (Sesame oil) 1 tbs
-Soy sauce 1 tbs
-Maida (All-purpose flour) 1 Cup
-Cornflour 2 & ½ tbs
-Iodized Himalayan pink salt ¼ tsp or to taste
-Water ¼ Cup or as required
-Til ka tel (Sesame oil) 1 & ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hara pyaz (Spring onion) white part chopped 2 tbs
-Chicken yakhni (Stock) 4 Cups (2 chicken cubes dissolve in 4 Cups of water)
-Soy sauce 2 tbs
-Apple cider vinegar ½ tbs
-Brown sugar ¼ tsp
-Shiitake mushrooms 1 Cup (soaked in hot water)
-Gajar (Carrot) julienne ½ Cup
-Bok choy leaves
-Chilli oil
-Hara pyaz (Spring onion) leaves chopped
-Lehsan (Garlic) fried
Directions:
-In a chopper,add chicken,spring onion,white pepper powder,pink salt,ginger garlic paste,sesame oil & soy sauce,chop well & freeze for 10 minutes.
-In a bowl,add all-purpose flour,cornflour,pink salt & mix well.
-Gradually add water,mix well & knead until dough is formed,cover & let it rest for 10-15 minutes.
-Sprinkle dry flour & knead dough again until smooth.
-Cut dough into 2 parts,take one part,make a ball,sprinkle dry flour & roll out with the help of rolling pin (as thin as possible).
-Cut into square (2x2 inches) then cut into triangles & set aside.
-In a cooking pot,add sesame oil,ginger garlic paste,mix well & cook for a minute.
-Add spring onion,mix well & sauté until translucent.
-Add chicken stock,mix well & bring it to boil.
-Add soy sauce,apple cider vinegar,brown sugar & mix well,cover & cook on medium flame for 2-3 minutes.
-Take chicken mixture (1 tbs) & add in broth,cover & cook on medium flame for 5-6 minutes (makes 10-12).
-Add shiitake mushrooms & mix well.
-Add prepared wonton sheets & mix gently.
-Add carrots,mix well & cook for 3-4 minutes.
-In a serving bowl,add wonton soup,bok choy leaves,chilli oil,spring onion leaves,fried garlic & serve!

Directions:
-Chopper mein chicken,spring onion, white pepper powder, pink salt, adrak lehsan paste, sesame oil aur soy sauce daal kar achi tarah chop karein aur 10 minute ke liye freezer mein rakh dein.
-Ek bowl mein maida, cornflour, pink salt daal kar mix karein.
-Paani dheere dheere add karte hue dough knead karein, cover karke 10-15 minute ke liye rest karne dein.
-Dry flour sprinkle karein aur dough ko dobara smooth hone tak knead karein.
-Dough ko 2 parts mein cut karein, ek part le kar ball banayein, dry flour sprinkle karein aur rolling pin ki madad se bohot patla roll out karein.
-Usay 2x2 inch squares mein cut karein phir triangles mein cut karke side par rakh dein.
-Ek cooking pot mein sesame oil daal kar adrak lehsan paste 1 minute bhun lein.
-Spring onion daal kar translucent hone tak sauté karein.
-Chicken stock daal kar ubal lein.
-Soy sauce, apple cider vinegar, brown sugar daal kar mix karein aur dhak kar medium flame par 2-3 minute pakayein.
-Chicken mixture ka 1 tbs le kar broth mein daal dein, dhak kar 5-6 minute medium flame par cook karein (10-12 wontons ready ho jayein ge).
-Shiitake mushrooms daal kar mix karein.
-Tayyar wonton sheets daal kar gently mix karein.
-Gajar daal kar mix karein aur 3-4 minutes pakayein.
-Serving bowl mein wonton soup daal kar upar se bok choy leaves, chilli oil, spring onion leaves aur fried garlic daal kar serve karein.
