Crispy Veg & Chicken Pies

Ingredients:

Prepare Filling:

-Cooking oil 2 tbs

-Boneless chicken small cubes 400g

-Adrak lehsan paste (Ginger garlic paste) ½ tsp

-Paprika powder ½ tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Dried oregano 1 tsp

-BBQ sauce 2 tbs

-Lemon juice 1 tbs

-Pyaz (Onion) chopped 1 small

-Shimla mirch (Capsicum) chopped 3 tbs

-Gajar (Carrot) grated 3 tbs

-Hara pyaz (Spring onion) leaves chopped ¼ Cup

-Mix cheese grated ½ Cup

-Cream 3 tbs

Prepare Dough:

-Warm water 1 Cup or as required

-Bareek cheeni (Caster sugar) 1 tbs

-Khameer (Instant yeast) 2 & ½ tsp

-Cooking oil 2-3 tbs

-Maida (All-purpose flour) sifted 2 Cups

-Iodized Himalayan pink salt 1 tsp

-Cooking oil 1 tsp

-Doodh (Milk) ¾ Cup or as required

-Breadcrumbs 1 Cup or as required

-Cooking oil for frying

 

Directions:

Prepare Filling:

-In frying pan,add cooking oil,chicken,ginger garlic paste & mix well until it changes color.

-Add paprika powder,pink salt,red chilli powder,dried oregano,BBQ sauce,lemon juice,mix well & cook on medium flame until it dries up (4-5 minutes).

-Add onion,mix well & cook for 1-2 minutes.

-Let it cool.

-Add capsicum,carrot,spring onion,mix cheese,cream,mix well & set aside.

Prepare Dough:

-In a bowl,add warm water,caster sugar,instant yeast & mix well,cover & let it bloom for 10 minutes.

-Add cooking oil,half of all-purpose flour,pink salt & mix well until gluten forms.

-Add remaining flour & knead until dough is formed.

-Grease dough with cooking oil,cover & let it rest for 1 hour at warm place.

-Knead dough again until smooth.

-Take 60g of dough,make a ball & spread evenly (5 inches).

-Add prepared chicken filling (2 tbs), cover & seal properly then dip into milk & coat with breadcrumbs.

How to store:

-Place pies on a tray & freeze for 4 hours or until frozen solids, move frozen pies to a Ziploc bag & freeze for up to 1 month. (do not thaw before frying)

-In a wok,heat cooking oil (150°C) & fry on medium flame until golden & crispy (makes 10).

-Serve with tomato ketchup!
